STON SALT REFINERY (Solana Ston)



The STON SALT REFINERY (Solana Ston) is located in the Dubrovnik-Neretva County in southern Dalmatia, 50 km north of Dubrovnik. The small town of Ston, with the longest medieval fortification walls in Europe, lies in close proximity to the mainland on a narrow isthmus that connnects the longest eastern Adriatic peninsula of Pelješac.

The salt refinery is located between the fertile fields of Ston and the deep Bay of Ston. It has an exceptionally long history. The archaeological findings in the region have revealed human activity as far back as the Neolithic period. It is assumed that salt began to be refined in this area in classical antiquity. There is no doubt that it was the reason trade increased, which brought both Greek and southern Appenine archaic culture by way of the Adriatic Sea, and the Iron Age culture from the hinterland regions  near Sarajevo in central Bosnia and Herzegovina.

The Ston salt refinery owes its present appearance to the arrival of the people from Dubrovnik, who bought these lands from the ruler of Bosnia and Serbia at the beginning of the 14th century. They raised an exceptionally strong system of defence alongside the newly established town of Ston. They built a Great Wall  that was more than 5,5km in length, with 40 towers and 5 fortresses across the hill next to Prevlaka, whose strategic purpose was to protect the land and the salt refinery.

Since 1333, they have been systematically planned in a suitable area that has survived up until today. They almost reach the town of Ston, which was settled mainly because it offered a permanent workforce for the salt refinery nearby. The salt refinery stretches over 400,000 m2 of flat surface, and is made up of 7 groups of pools for the evaporation of seawater, which flows into a carefully planned canal system of 5 rows with 8-10 square crystallization pools each. Their size and exemplary tidiness have ensured a high production level for a long time. The salt refinery was the greatest source of profit for Dubrovnik, which grew into a small free republic from the 15th century onwards, and whose economy was tied to trade.

This is why they were planned with great skill, and built and maintained with great financial investment by its one and only powerful owner, so becoming the largest on the eastern Adriatic shores. They stretch right along the old harbor in Ston, where larger vessels docked for loading salt. There were large functional warehouses, which alongside the geometrical network of fenced-in pools, allowed for the excellent handling of salt, from collecting to drying, to warehousing, and finally, the transfer to other means of transport. Such salt works, as a whole, represent a priceless monument to the past economic activity of mankind. As they are still in use, they bear witness to the exceptional continuity of human labor under the best ecological conditions. The qualities of the Ston salt refinery are: it is the only salt that is not bitter and that does not require any additives against clotting. Today, due to age, war damages and earthquakes, the salt refinery produces mostly industrial salt.

STONSKE   SOLANE

STONSKE SOLANE nalaze se u južnoj Dalmaciji, danas u dubrovačko-neretvanskoj županiji 50 km. sjeverno od Dubrovnika. U neposrednoj su blizini gradića Ston, s najvećim sklopom fortifikacija iz srednjeg vijeka u Europi, na uskoj Prevlaci koja spaja najduži istočnojadranski poluotok Pelješac s kopnom.

Solane su smještene između plodne udoline Stonskog polja i dubokog Stonskog zaljeva i imaju izuzetno dugi kontinuitet trajanja. Naime, arheološki su nalazi u užem području potvrdili zametke života već u neolitu, a pretpostavlja se da se sol na današnjem mjestu počela proizvoditi u klasičnoj antici. Svakako je ona bila temelj pojačanoj trgovini s kojom su u ovo područje pristigle tekovine kako grčke i južnoapeninske arhajske kulture preko Jadrana, tako i one iz kopnenog zaleđa pripadajući željeznodobnoj kulturnoj skupini iz okolice Sarajeva u središnjoj Bosni.

Svoj današnji oblik Stonske solane duguju dolasku Dubrovčana, koji početkom 14. stoljeća kupuju ove zemlje od vladara Bosne i Srbije te uz novoutemeljeni gradić Ston podižu izuzetni čvrsti sistem obrane. Preko brda pored Prevlake zidaju Veliki zid dugačak preko 5,5km. s 40-ak kula i 5 tvrđava svrhom strateškog osiguranja svekolike zemlje, ali i čuvanja solana.

Od 1333. godine one su sustavno planirane na način koji je na prikladnome terenu preživio do danas. Praktički se dotiću grada Stona koji je i naseljen poglavito zbog namicanja trajne radne snage u solanama koje su mu u predvorju. Pružene na više od 400,000 m2 ravne površine sačinjene su od 7 grupa bazena za pripremno isparavanje mora, koji se sa promišljenom sistemom kanala stapaju s 5 redova po 8-10 četvrtastih bazena za kristalizaciju. Njihova veličina i uzorna urednost odavno omogućavaju visoku proizvodnu razinu, pa su za Dubrovnik, koji od 15. stoljeća izrasta u malu slobodnu državu s privredom najjače vezanom uz trgovinu, solane  trajno bile najveći izvor dobiti. Zato su planirane s velikim umijećem, a uređene i održavane s velikim financijskim ulaganjima jedinog svojeg moćnog vlasnika krajnje racionalno, da bi stvarno postale najveće na istočnojadranskoj obali.

Pružaju se pored same stare luke Stona, gdje su pristajale i veće lađe za ukrcaj sirovine, a opskrbljene velikim magazinima primjerno funkcionalne arhitekture, što im uz geometrijsku mrežu ograde bazena omogućava odlično baratanje sa solju, od branja preko sušenja do skladištenja i, najposlije, prebacivanja u daljnja sredstva transporta. Takve solane u cjelini predstavljaju dragocijeni spomenik ekonomske djelatnosti ljudi u prošlosti, a budući da se još koriste ostaju svjedočanstvom iznimnog kontinuiteta čovjekova rada u najodličnijim ekološkim uvjetima. Odlike Stonske soli su : jedina sol u kojoj se ne osjeti gorčina i kojoj nije potreban nikakav aditiv protiv zgrudnjavanja.
